Carnitas Jackfruit – Drain can of jackfruit and slice as shown. Sauté jackfruit with 1/2 an onion (roughly chopped) in 1 TBSP of avocado oil. Sauté until the onion is translucent then add 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp chipotle chili powder, 2 tsp cumin, salt, and pepper. Add 1/2 cup of water and the juice of one lime. Let simmer for 20-30 min until liquid is absorbed and jackfruit is tender.
Baked Tofu – Press and dry off a block of regular to firm tofu, cut into cubes, toss in 2 Tbsp of cornstarch. Bake at 400 for 20-30 minutes, depending on cube size, until crispy.

Cashew crema – Soak 1 cup of raw cashews overnight or for 10-20 minutes in boiling water. Blend cashews in a food processor with 1/2 cup of water, the juice of a lime, a pinch of lime zest, 1 tsp of ACV, and 1-2 tsp of chipotle peppers in adobo sauce, until as smooth as possible.

  3. My diet is similar to yours. My kids are 21, 18 and 13… they all still live at home and they eat meat and gluten. My husband's diet is like the kids' but he has to eat small, low-fiber meals due to a health condition. It's a juggling act trying to please everyone in the household and stick to my personal dietary guns. Subscribed to your channel! 💗

  4. I have a intolerance to gluten so can’t eat it. Not allowed to eat meat expect fish, have to go plant base. I thank my mother’s side for this wonder rare genetic gene that I have that make me have to eat this way. Lol SO IS A CHALLENGE!!! Pescatarian/plant based/ gluten free lol
